My question is how can I see the gems I have given to the photos, as well as see the favorites I have.

You cannot "give gems" to a photo, so something is getting lost in translation here.

like a favorites section but with gems

You mean “+1”?

You have to favorite them, not +1 them. A +1 only adds to the score—a favorite will do that AND add it to your favorites queue on your account page
